Vanilla Cookies
Vanilla cookies are made using lots and lots of butter. Home-made butter pastry dough yields a rich and flavorful taste. For those of you that run at the sight of butter rest assured this recipe is much healthier than all the “diet” pastries at the store, which are filled with hydrogenated vegetable oils and enough preservatives/additives to make a chemist cry. Butter pastry dough is very easy to make, you can’t go wrong as long as you keep to the proportions.

Ingredients

  • 500 g all-purpose flour, non-bleached
  • 250 g powdered sugar
  • 2 eggs
  • 250 g butter
  • 0.5 g vanilla powder

Instructions

  1. Mix together the flour, powdered sugar and vanilla in a large bowl or food processor. Alternatively you can do this on a flat surface such as a table or counter-top, however this is much messier. Work the eggs and melted butter into the flour until well-distributed, about 10-15 min if done manually.
  2. Once the dough is ready it is time to shape it into biscuits. Shapes and sizes are entirely up to you and the kids. If there happens to be a cookie press in the household great but it is not required. Stretch the dough using a rolling pin to the thickness of your choice and use cookie cutters or a small cup as a last resort.
  3. Bake in the oven at 170 C for about 40 minutes or until the cookies have a slight orange hue.
  4. When cooled, sprinkle with powdered sugar and enjoy!
