Easy Tuna Avocado Salad
Easy and fresh tuna avocado salad. Brings back memories of healthy and tasty foods, hot springs, clean air and lots of sun from a summer in Bormio, picturesque town in the Italian Alps. Bormio’s mineral springs have health benefits such as detoxification, stress relief, anti-inflammatory effects and many others. The springs, who’s water temp is between 37 and 43 degrees Celsius have been a must-visit since Roman times. Bormio is part of Italy’s Stelvio national park, which is world famous for its ski slopes. Our summer visit did not include skiing but we made sure to fill our afternoons in the Spa.Did you know that Spa originates from the Belgium city named Spa? Another place world famous for its mineral springs. Enough relaxation as I’m starting to drift away, lets focus on the recipe 🙂
Avocado Tuna Fish Salad Red Onions

Ingredients

  • 1 cucumber
  • 1 avocado
  • 150 g (1 can) tuna fish (solid tuna)
  • 1 red onion
  • 8-10 sprigs (stems) of fresh parsley
  • 1 garlic clove (optional)
  • Salt to taste
  • 1/2 lemon
  • 30 ml Olive Oil (Extra Virgin)

Instructions

  1. Peel the cucumber and cut it into half moons.
  2. Cut the onion into half moons and the Avocado into squares.
  3. Chop the parsley.
  4. Mix everything and the tuna fish in a large enough bowl.
  5. Season with Olive Oil, lemon juice and salt.
  6. If you choose to, crush and add the garlic.
  7. Enjoy!
